I don’t know how Rich feels about second guessing, but here I am, thinking that removing the powers of the Gorgon will also remove the twisting of her spirit towards Ranna as well.
From what we’ve seen and my own assumptions (a lot of liberty taken with those) it would seem like the transformation depends on the victims natural personality before being changed. Those who were already followers of Ranna or who were already evil seem to keep most of their personality intact (with an altered loyalty), whereas those who were more good aligned (such as Sahar) appear to have their natural personality wholly overwritten by Ranna, making them little more than puppets. This is of course all just conjecture without word from Rich so take it with a heaping mountain of salt.
I’m pretty sure Rich *did* explain it in some comment but good luck finding it again. As I recall, the personality is changed the minimum necessary to make them a Rannite, which should give approximately the effect you suggest.

There’s a big difference between frustration at your deity over a disagreement and outright turning evil however.
Yes, it might not be how a priestess of C’thier should act, but she’s human and allowances have to be made for the occasional slip ups. Even the gods are not perfectly in sync with their ethos all the time (see C’thier’s frustration with Owen).

It was a seemingly random bolt which fit perfectly into his plans while he just happened to pass by the city with an evil smirk while looking for information about how to get to the mirror. Obviously a perfectly innocent coincidence.
No after the Caliph was treed, he went on an expedition with the Caliph's children to find the mirror to undo the curse, and he was imprisoned in the mirror when they found it.
